The Solomons consist of almost a thousand islands spread across around 30 000 square kilometres of ocean. They were named after King Solomon by a 16th-century Spanish adventurer who came chasing legends of gold. The smaller islands of the archipelago are atolls elevated of the coral reefs, surrounded by absurd beautiful turquoise seas. Article excerpt: The aurora australis is another reason why the southern skies spark interest. Just like the Northern Lights, this phenomenon occurs when electrically charged solar particles collide with oxygen and nitrogen atoms in the earth’s atmosphere. “The Southern Lights are not that well known,” says Jasper Sigon, co-founder of Voyages & Journeys. He notes that while the colours produced can be even more vibrant, they are “much more elusive than their northern hemisphere counterpart”. During our travels we met craftsmen and women who run restaurants that have been passed down in the family for decades. One of my fondest memories was when I was recommended a dish, which I was really impressed with the idea of eating something like that the simplicity but at the same time the overwhelming flavours was an experience by itself. I was then explained by the owner that the recipe came from the year 1934, created by the very first chef of the restaurant, and it is still sharing a main stage in that kitchen today – those restaurant owners (family) are now good friends of ours and we visit them with other family members and friends regularly. The diversity of some regions make them unique and on the same immediate region of a family owned business, we could find restaurants that have been awarded several Michelin star and present works of art that are paired with the most beautiful and also the most surprising regional wines. There is a special joy in visiting vineyards run by the same family for over 500 years and experiencing tastes at the most memorable locations, accompanied by wine specialists, the enologists and vineyard owners. It is moments like this, over a delicious glass of wine and canapés, that you can create friendships and great memories. A destination's cuisine tells you so much about its history, culture and people – I am a big believer in sampling the local delicacies and dishes of every place I visit. During our travels we met craftsmen and women who run restaurants that have been passed down in the family for decades. One of my fondest memories was when I was recommended a dish, which I was really impressed with the idea of eating something like that the simplicity but at the same time the overwhelming flavours was an experience by itself. I was then explained by the owner that the recipe came from the year 1934, created by the very first chef of the restaurant, and it is still sharing a main stage in that kitchen today – those restaurant owners (family) are now good friends of ours and we visit them with other family members and friends regularly. The diversity of some regions make them unique and on the same immediate region of a family owned business, we could find restaurants that have been awarded several Michelin star and present works of art that are paired with the most beautiful and also the most surprising regional wines. There is a special joy in visiting vineyards run by the same family for over 500 years and experiencing tastes at the most memorable locations, accompanied by wine specialists, the enologists and vineyard owners. It is moments like this, over a delicious glass of wine and canapés, that you can create friendships and great memories.
